I was SO scared of my Instant Pot! I wanted one for awhile but was super intimidated. Then we were gifted one for Christmas so I have decided to put it to use! I’ve made a couple things but this was by far my favorite! We love smoking pork shoulder on the grill, but when it is so cold it’s nice to have this option! Bonus: it’s a lot faster too! Just a few tips, if you get a smaller (or bigger) pork shoulder. It is recommended to do 15 minutes per pound. So for a 4 pound I did 50 mins, plus it cooks an extra 10 mins while releasing. The internal temperature of your meat should be 203 degrees, mine was spot on! I shred in my KitchenAid mixer and it is so much easier than using forks!
